Chef Jason Maddy Leaves Dallas, Heads to Grand Cayman Island

Jason Maddy, the former executive chef at Oak, has left Dallas for a position at the Royal Palms Beach Club on Grand Cayman Island.

The talented chef parted ways with Oak last May.  Maddy is already on site where his plans include “bringing it [hotel] back to the big kid on the block.”

Goodbye 635, hello Seven Mile Beach.

I’m very sorry to report that one of Dallas’ most talented young chefs, Jason Maddy, has left his post at Oak. The rumor surfaced earlier this afternoon [May 29 2013] on CraveDFW, and Oak’s publicist, Lindsey Miller, just sent word that it’s true. “Out of respect for Jason and his family,” she wrote, “we cannot go into details. But due to person health reasons, he is no longer executive chef of Oak.”

We’ll certainly stay on top of this story. Maddy helped earn a four-star review for Oak shortly after it opened, and the 37-year-old chef landed a spot in Best in DFW: Chefs last year, not long after his debut at Oak. “Maddy cooks with quiet power; his dishes are elegant, precise and, yes, delicious,” I wrote in that story. “His vegetable terrines are masterful, such as a recent one fashioned from matchstick-cut carrots and banded with horseradish cream; it came surrounded by baby beets of the purest flavor (each in a dab of beet foam), graceful quarters of glazed baby turnip and soft, rich rutabaga fries. Maddy’s charcuterie (tête de veau croquette, pork rillettes) is superlative, and his main courses, like pink snapper on a bouillabaisse sauce with Manila clams and celery, continue to surprise and impress.”
