Did you celebrate International Hummus Day?

image001 International Hummus Day was Friday May 13! Even if you didn’t celebrate it being Friday 13th you can still make a good feast of the day all this week with this delicious dip to share with family and friends. Whether its guacamole, cheese or salsa – dips are perfect for parties.

So, celebrate a post International Hummus Day  this week by making a delicious hummus, or chickpea paste, which is both healthy and original. KitchenAid helps you celebrate by sharing a hummus recipe to enjoy with your loved ones, made with the unique Magnetic Drive Blender.

Hummus is easily prepared at home with some chickpeas, tahini, olive oil, salt, garlic and lemon juice. It’s very low in fat and high in iron. It also contains folic acid, vitamin B6 and vitamin C. Since its made with chickpeas, it has protein and dietary fiber along with zinc, calcium and other minerals.

image002Hummus, one of the oldest foods in the world, originated in the Middle East and is blending its flavors with the Caribbean. With eating habits taking a healthier turn, hummus has become more popular in the Caribbean. It’s prepared for vegetarians and can be transformed with different ingredients.

It can be flavored in so many ways by adding a few ingredients such as avocado, beans, cilantro, tomatoes, jalapeños and more.

Hummus, a Mediterranean favorite, is absolutely great for you. A study by the New England Journal of Medicine shows that nearly 30% of heart attacks, strokes and deaths by people prone to heart disease can be prevented by switching to a Mediterranean diet, which has multiple health benefits.

Roasted Red Pepper Hummus

Ingredients:
· ½ cup Tahini, stirred
· 1 tablespoon extra-virgin olive oil
· Lemon zest from one lemon
· 4 tablespoons fresh lemon juice
· ¼ cup water
· 1 14oz can chickpeas or garbanzo beans, drained and rinsed
· 2 cloves garlic
· 1 teaspoon kosher salt
· ½ teaspoon ground cumin (optional)
· Pinch ground cloves
· Pinch white pepper
· Pinch cayenne pepper
· 3 tablespoons or ¼ cup roasted red peppers

Instructions:
1. In a separate bowl, whisk together the Tahini and the olive oil and set aside.
2. Blend rest of ingredients in the Magnetic Drive Blender. Select the configuration Soup/Sauces.
3. Pour the Tahini and olive oil mixture. Blend until smooth.
4. Add roasted red peppers through ingredient feed, blend until creamy.
5. Serve with pita bread or vegetables.
