Canape to pair with: Stuffing balls wrapped in pancetta

Ingredients: 25 grammes of butter, 16 rashers of pancetta that have been sliced in half, 2 crushed garlic cloves, 1 finely grated unwaxed lemon, 50 grammes of fresh white breadcrumbs, 50 grammes of toasted pine nuts, 10 sage leaves that have been carefully chopped, and 4 tablespoons of cranberry sauce. Add salt and pepper to taste.

Instructions:

  1. Place a rash of pancetta around the border of a muffin tray.
  2. In a bit of butter, soften the onion. Garlic is added, cooked for a few minutes, and then poured into a basin to chill. Stir well after adding the other ingredients.
  3. Roll into balls and insert into pancetta cases— Bake for 20 to 25 minutes. Serve after adding cranberry sauce on top.

Canape to pair with: Kebabs with prosciutto, mozzarella, and tomatoes

Ingredients: 30 large basil leaves, 1 box of cherry tomatoes cut in half, 2 packs of pearl mozzarella, and 1 pack of prosciutto divided into strips.

Dressing: 2 tbsp pesto, 2 tbsp olive oil, and 1 tbsp lemon juice.

Instructions:

  1. Place half a tomato and two pieces of folded prosciutto on a kebab stick. A mozzarella pearl should be encircled by a basil leaf and threaded onto the stick.
  2. Combine the ingredients for the dressing, then sprinkle it over the kebabs.

Parma Violet Surprise

Canape to go with: fig-topped goat cheese crostini

Ingredients: 40 thin slices of day-old bread, 4 tablespoons of olive oil, 450 grams of goat cheese, 2 tablespoons of creme fraiche, 4 thinly sliced ripe figs, and about 4 tablespoons of runny honey.

Instructions:

  1. Baguette slices should be placed on a baking sheet and brushed with olive oil to produce the crostini. For about 10 minutes, bake at 180 degrees until crisp and golden.
  2. Blend the crème Fraiche and goat cheese.
  3. After the crostini has cooled, top each one with a slice of fig and a tablespoon of cheese, drizzle each with honey, and then serve.

Tropical Spiced Rum

Beetroot Salmon Gravlax with Horseradish Cream is a canape to compliment.

Ingredients: 600 g of fresh salmon filet, 100 ml of granulated sugar, 50 ml of table salt, 12 tsp of crushed black pepper, 1 fresh beetroot, 2 packs of sliced rye bread, 200 g of crème Fraiche combined with 3 tbsp of spicy horseradish sauce, 1 beetroot finely sliced, and chopped cooked and fresh dill.

Instructions:

  1. Skin side down, lay one-half of the salmon filet onto a shallow plate.
  2. Mix the pepper, sugar, and salt. Spread the other half over the salmon. The second piece of salmon should be layered on top of the grated beets, and the remaining sugar mixture should be sprinkled over it.
  3. Wrap in plastic and place in the fridge for 24 hours. After removing the top and turning the food, refrigerate for a further 24 hours.
  4. Cut the rye into circles; each slice should yield two. Each circle should have a gravadlax slice, horseradish cream, and dill or beetroot as garnishes.

Vodka Sunrise

Canape to go with: Thai Prawn Cocktail

Ingredients: 700g of thawed frozen prawns, 1/2 a diced cucumber, 1 mango, 2 deseeded and finely chopped diced fresh chilies, 25g of fresh coriander in each glass, and finely chopped dill, parsley, and chives.

Dressing: 3 tbsp fish sauce, 1 tbsp honey, 1 tsp cumin powder, and 1 juiced lime.

Instructions:

  1. Make sure the prawns are thoroughly rinsed, then combine them with the cucumber, mango, and herbs in a bowl.
  2. Mix the dressing ingredients, pour it over the shrimp mixture, and whisk it thoroughly. Serve after squishing into glasses.
