Prep for Success Recipes: Dad’s boiled fruit cake

Cayman Prep and High School have produced a book of multi-cultural family recipes that everyone
can enjoy.

It was made possible through the selfless efforts of the parents of Cayman Prep students who worked tirelessly to see the project through to fruition.

Ingredients (SERVES 10)

  • 1 lb. mixed dried fruit
  • 3 eggs
  • 12 ozs. all purpose flour
  • 1 tsp. baking powder
  • 9 ozs. sugar
  • 8 ozs. butter
  • 1 tsp. vanilla extract
  • ½ tsp. almond extract
  • Glazed cherries or nuts, to garnish

Directions

  1. Preheat oven to 300°F.
  2. Line a baking tin with wax paper.
  3. In a saucepan, cover fruit with water.
  4. Bring to a boil, and boil for 5 minutes; strain.
  5. Cut butter into strained fruit.
  6. Beat together eggs, sugar, vanilla and almond extracts; add to fruit.
  7. Fold in flour and baking powder.
  8. Pour into the tin, and smooth top with a knife.
  9. Top with cherries and / or nuts.
  10. Bake for 30 minutes, and then reduce heat to 280°F.
  11. Continue to cook for approximately 1-1.5 hours, or until skewer or knife inserted in the centre comes out clean.
