Caribbean Bushwacker

The Caribbean Bushwacker—think of it as a chocolate piña colada—is a staple frozen beach drink that immediately evokes images of afternoons on the sandy shore, sipping in the rich, chocolately concoction.

The drink, synonymous with the sugar white sands and crystal-clear blue waters of the Gulf, has Caribbean origins. When the owner of the Sandshaker Bar (a famous Florida beachside establishment) visited Sapphire Beach Village on St. Thomas in the U.S. Virgin Islands, she discovered the boozy milkshake. Taken with the frozen cocktail’s combination of cream of coconut, vanilla ice cream, coffee liqueur, Irish cream liqueur, crème de cacao, and dark rum, she brought the beverage stateside.

Forty years after the Caribbean Bushwacker’s pilgrimage to the Gulf, the boozy milkshake-like drink is a staple at beach bars on the Florida and Alabama coastline.

Ingredients

3 cups cracked ice
1/2 cup cream of coconut
1/4 cup coffee-flavored liqueur, chilled
1/4 cup Irish cream liqueur, chilled
1/4 cup dark crème de cacao, chilled
1/4 cup black or dark rum, chilled
2 tablespoons chocolate sauce or chocolate syrup
4 cups vanilla ice cream

How to Make It

Combine first 7 ingredients in a blender; process until finely chopped. Add ice cream; process until smooth.
